Let say I hace a wiremesh filter or a filter like a sponge.
Can someone tell me if the specific area of a filter like these is calculated per :

1)volume of material of the filter media only

2)volume occupied by the filter (including the void space)

SFTB,  if I was to address either of the approximation you'd asked, I'd just go back to first principals to make the first pass estimate.  The physical shape of the media and density of wire weave is so variable, that providing any answer here is pointless.  

If it is important to be more accurate than your own estimate, the suppliers of these products may have such data.
