Say you have a standard internal gear in the model,

is it possible to link, say the number of teeth, to a table in the drawing?

It's gotta be.  I know you can link document properties relatively little problem.

I'm not sure what you mean by "a table in the drawing", but all/most aspects of a model can be controlled by a Design Table. The tooth would have to be circular patterned to control the quantity.
