In DMU, is there any way to save the session that you have loaded so that so you can reopen it easily.  In otherwords, what I am trying to do is change colors of certain parts within DMU and then save it so I can later update it... without changing the model's color in the database.  

Much like UG's bookmarks.

Can you save the Product?  FILE --> SAVE AS and Save the CATProduct document.

Otherwise, you can use TOOLS --> DMU DATA FLOW --> SAVE AS FROZEN --> Product (there are several other options here as well).  

The drawback to all of these is that you will loose associativity to the database (if anyone adds, deletes, or moves anything in your Product, you will lose those changes).  Depending on the option chosen thru Save as Frozen, you may or may not have associativity to the individual parts.
