A Vision System is the first thing that comes to mind.  Cognex is the industry leader.

For chips, vision sounds like a good way to go.

For cracks and internal defects a sonic system my be good.  If your parts are all the exact same size and shape you can just measure the resonant frequency and compare to a ref. part.  I have seen the systems, but can't remember the name right now.

Here is a report that I ran across from ONRL.  You might also want to check their website, Ceramic Technology for further information.

Peter J. Blau, Rebecca L. Martin, and Laura Riester, "A Comparison of Several Surface Finish Measurement Methods as Applied to Ground Ceramic and Metal Surfaces," Ceramic Technology Project Report ORNL/M-4924, January 1996.
