I downloaded SP 2.1 and read the notice that SolidWorks will no longer be supporting Win 2000 OS with SW 2007 release. Does this mean SW 2007 will not work at all with win 2000 and I must change to Win XP Pro? or will it still work but just not supported?

If Microsoft stops supporting and OS, then SW stops supporting it too. It doesn't mean that it will not run on it, but if something happens with SW on this OS SW will not support you. You will have to upgrade to the proper OS before SW would help.

Is this drop of support also tied into the possibility that SW2007 will be a full 64-bit version only?  And if so, will a 64-bit version, run on a 32-bit OS?

I don't beieve so Mike.  As Scott said it's been SW policy to follow microsofts support of operating systems.  I don't beieve 64 bit has anything to do with this.

SolidWorks is releasing shortly the 64 bit version of SolidWorks, however still fully suppoting the current version as well.  The reason for not supporting Windows 2000 is that Microsoft is getting ready to launch their next OS, formerly code named Longhorn, now going to be called Vista.  SolidWorks need to start ramping up to support this new OS, and can not devote the resources required to another OS, this is the same reason you will not find SolidWorks on MAC.

Interesting stuff here. What would be the reccommended OS to upgrade to from Win 2000? XP Pro? or is it on its way out too? Our IT is handled by an outside service. I'm sure they can answer these questions, but I'm looking for a Solidworks point of view...
