Go to ASSIST (http://assist1.daps.dla.mil/quicksearch/) and download 2 documents:
MIL-PRF-7808L LUBRICATING OIL, AIRCRAFT TURBINE ENGINE, SYNTHETIC BASE
and
QPL-7808-38, the latest Qualified Product List for MIL-PRF-7808.
The QPL lists brand names & manufacturers. You should be able to find their websites & download the MSDS, which may give the heat capacity directly, or else you can add up those of the constituents.
And of course, the manufacturer's Customer/Technical support should be able to provide the info.

All of the above are typical synthetic oils used in gas turbines and I know for sure the last one is ester based.
Seems like I also had the same problem and could not find any published data so I had to call the manufacturer.
Be careful using an ester based oils as there are certain types of seal materials that cannot be used in valves, etc. with this type of oil. You also have to be careful not to used any copper based materials as I recall.
