How can obtain equation of f(x_1, x_2)= y, with
x_1, x_2 and y ??
(with statistics ToolBox => Polynomial fiitting tool,
 nonlinear fitting tool, ....)

In general, you can't.

You MUST have some idea about the general form of the equation.  Only then, can you apply least squares or other weighting to find the appropriate parameters for the equation you choose.

Then :
I have idea about form of equation. For Example
it is sth like below :
y = x_1^2+b+x_2^2+c

But after that how can find b and c ?? And obtain equation.
