I've Googled with no luck on this one.

I need to know the ampacity of a carbon brush with the dimensions 25x50x40mm. (40mm long)  
Can anybody point me in the right direction?  Brush type is CM 5H (and if anybody can explain that designation to me I would appreciate it also)

Have you tried Helwig Carbon Products website?  Here's the link: www.helwigcp.com and they have a tech section, as well as you can ask them tech questions.

About 60 - 80 amps per sq. inch for dc machines. In your case, 120 - 160 amps.

The grade of the brush is usually found on the face of the carbon.The grade indicates the material composition of the brush.Brush grades are usually classified according to the manufacturing processes and types of material used.

In your case the material is METAL-GRAPHITE, suitable for up to 40 VDC motor and slip rings for ac machines.

The current density for this brush is (To some manufacturers):90 Amps/SqrInch, your brush´s Sqrinch is 1.92 then the Rated amperes = 172.8.With a 5% variation the operation amperes range will be: 181.4 to 164.
