Hi guys,

Does anyone know any paper or book with official data about the performance of a wing of any commercial airliner, providing ailerons deflection and roll moments, pitch due to roll, etc.

You can get the control deflections and cg  positions from the FAA type data sheet. Pitch due to roll you will have to look elswhere.

Books by Michael C. Niu are a good resource for this kind of info.  So are Roskam's series of aircraft design books.  Amazon has them all, I expect, but they're cheaper if you can find them used.  Try also looking up DARCorp (Roskam's company) on the internet.  They have quite a library avaialble to them, too.
