In Spanish we can say substituted by, as in substitute olive oil by sunflower oil. Can we say the same in English ?
In other words can we use the adjective "substituted", for both the replacing and the replaced item as well ?

In English, substitute can be a verb, adjective or noun:

Sunflour is a good substistute oil.
Sunflour oil is a good substitute.
Substitute olive oil with sunflower oil.

Nice post.  It's just a shame that they didn't manage to get the word in as an adjective anywhere.  That would have been really clever.

In answer to the original question, as far as I know the new thing is substituted for the old thing.  If you said the old thing was substituted by the new thing, I'd know what you were talking about but I don't think that's normally said.
