going over the scope of work for a CWI inspection on some big box retail outlet's one item to be inspected was the joist drag strut welds. This is a new one on me. I can't find anything called out like that on the structural drawings. What am I missing?

Joists may be used as collectors, or drag struts, to collect and transfer load from roof to shear walls.  If there are no joists serving this function then they won't be labeled on the drawings.  Because they are transfering axial load from roof to wall they will need a heavier weld than the standard minimum joist seat weld.
