I am gathering information before extending gas line to a pool heater. Using black iron pipe, is there a specific union fitting made expressly for natural gas? I have learned through county inspectors that union fittings are permitted and that I could extend the line using copper. I choose to stay with iron, though. I am trying to find if a common black iron union fitting is appropriate for a gas line.

Check your code first, as I recall: Yes, but the fitting must be in an accessable location (do not bury or hide it).  The fitting must be entirely metal (no gaskets) It is also useful if installed just outside the heater after the valve, that way you can turn the valve off, break the union remove the pipe after the union and pull the burner tray for cleaning.  The heat exchanger and burner tray need cleaning at least every 5 years for good operation.

There is no unique union fitting for gas service. Black iron is the customary piping material for gas service and the union is also made from black iron union.
