I am currently designing a mold that has a pretty good size copper bracket we are overmolding around. Does anyone have any good idea's on how to get the copper not to take the heat away from the plastic when being shot and short shotting or sinks.

How about 304 stainless steel? It's thermal conductivity is less than 1/20th of copper

Increase melt temp, mould temperature, injection speed and injection pressure to the maximum possible considering other limitations.
Go for an easier flow grade of material.
Go for a slower cycling (ie non nucleated) grade of material.
Increase the section thickness in critical areas to promote flow.
Increase the number of gates.
