Is there any way to change the default value for the first ordinate dimension from zero to some value that will carry through the rest of the dimesions.  I need to insert a datum elevation other than zero on some equipment and then show the subsequent elevations without having to go in and edit the dim text.

Is this on a drawing?  In a drawing, you can just drag the 0 ordinates to new locations and all the referenced dimensions based from that 0 will update.  You will get a message asking you if this change is intended.

Why not just create a point or construction line (datum) where the real zero elevation would be. It can be outside of the drawing border if necessary.

In Option\Document Properties\Detailing you can set the offset.
