Carbon fiber is used as a reinforcement in composites. You must consider both the fiber and the matrix when using this material. The properties of the fiber itself can be found at:

Carbon fiber reinforced plastics can be suitable for replacing steel. Carbon fiber is expensive and has limited shape capabilities.

Glass fiber is the most common filler and it come in a few different grades. Carbon and boron fibers are also used, often mixed with glass to lower the total cost and control the properties. Often the grades and mixture are driven by the required stiffness of the part.
In selecting a polymer the maximum temperature is a very important criteria. There are a lot of choices starting with Nylon 6/6 and ABS, PET and PBT, up to the high end stuff like PPS and PEEK.
