I have a solenoid that came from a lawn sprinkler system. No idea of the make or model. Is it possible to determine the pulling force, length of stroke, or whatever. If so what measuring devices would I need (multimeter)?

Sorry if this is a stupid question. I am not an engineer but am interested in this.

If it is the solenoid from a valve, it is very low power. Those solenoids do not actually operate the valve directly. They operate a tiny little needle valve feeding a diaphragm, which in turn uses the water pressure itself to open the big valve. I doubt that the travel is more than 1/8 inch and the force is probably similar to that of a retractable pen. You would need a micrometer to measure the travel, and a very sensitive strain guage type of instrument to measure the force with any reasonable accuracy.
