Are there any low cost thermistors that can operate up to 350C or 400C? I am trying to measure the temperature in a flue that can get up to ~700F with a probe that connects to a circuitboard I am designing. I'm not sure if I need PTC or NTC, but I can probably make it work with either.

Have you considered using a linear resistance type (e.g. PRT) or even a thermocouple? These are usually available in ruggedised stainless steel sleeves which can be mounted with various bushes or glands into the flue, and are more able to withstand flue gases.

They have well-defined characteristics, while a thermistor has rather more variable characteristics and may need to be specifically calibrated for each individual thermistor. The t/c will survive for a long time in the flue duct if you spec an industrial type with a stainless or inconel sheath.
