Wipeout or hiding text on an inserted Raster Image

My company often inserts a raster image into CAD to use as a background object. Most of our plots use portions of or the entire raster image.
Outside of erasing something on the paper version prior to scanning, what is the easiest way to "wipeout" or hiding a piece of text in the raster image? Can this be done in AutoCAD or an image editing software?

building on IFRs suggestion, (if text can't be clipped out)
copy image, then "clip" down to small size (just larger than the text you are trying to hide) make sure small image background is the same as near your text. then place small clipped image over the text (copy small image and place over more text if you have more to hide)
after all text is "behind" small clipped images then turn image frames off.
